Easy Keto Kosher Homemade Pickles
Pickle fans unite! On the Keto diet, you can’t just grab any jar of pickles off the store shelves. Some pickle jars are filled with added sugar. You can make these easy homemade pickles for yourself and never need to go to the store for your late-night craving again. Use this recipe as a starting guide, which is for pretty classic-tasting pickle spears. You can increase the garlic flavor, heat level, or other spices and dill to your liking. If you’re making any Keto kosher recipes, this would be perfect for you. The addition of garlic to the brine makes these pickles authentically kosher, and the salt can simply be replaced with kosher salt!
Note the ingredients
Please note the ingredients used for pickling the cucumbers. Use this ingredient list as a guide, which you can follow exactly, and alter the ingredients as you see fit. Add more or less of a spice to your tastes. There is a small spice level included in this recipe, which you can alter as well.
Can I use kosher salt instead of pickling salt?
To make these kosher pickles Keto-friendly and fitted to any personal needs, you can swap the pickling salt out for kosher salt. There’s no need to do any math; you can substitute with kosher salt 1:1. And while you’re reading this, note that you can also use coarse sea salt if you’re out of pickling salt.
The benefits of eating pickles
What’s the point in eating pickles? It might be worth it to make your own at home because pickles may help improve your gut health. If you haven’t heard the word, your gut health might be linked to beyond just your physical health and building a healthy microbiome. The good bacteria in pickled foods is possibly the key to good gut health.

Step 1
Pick your type of cucumber first, and cut it into 1-ounce pieces. You can choose gherkins made for pickling, English cucumber, or another type that you like. In this recipe, a seedless cucumber from Mexico was chosen and cut into spears.Step 2
Pick your pickling spices next, and place them at the bottom of a 12-ounce jar. You can follow the ingredient list above or modify it to your tastes. Adjust the heat level by altering the crushed red pepper flakes and bay leaf, if you are sensitive to spice.Step 3
Place the cucumber spears in the jar on top of the spices. Next, fill a pot with water, apple cider vinegar, liquid stevia, and pickling salt. Bring the pot to a boil while you stir the ingredients so the salt dissolves.Step 4
Once the pot reaches a boil, remove it from the stove and pour it into the jar of cucumbers. Seal the jar, and let the jar cool down to room temperature on your countertop - at least 1 hour. From there, let the cucumbers pickle in your refrigerator overnight or at least 12 hours before eating.
