Instead of cooking the frozen stuff, prepare this Keto breakfast recipe for a healthier start to your day! Each sausage bite is densely packed with protein from the meat and spinach. You’ll feel full without feeling bloated! Suggestions for how to make the sausage bites part of a fuller breakfast are made below. You can store any leftovers in an airtight container in your refrigerator for up to 5 days. Simply microwave the bites with a damp paper towel to return moisture to them.

Oil alternatives

Don’t want to fry your sausage bites in vegetable oil? Avocado oil and coconut oil both have high smoke points that can be used for frying as well. If you have it, ghee can also be used. Avoid frying the sausage in butter or olive oil, since the smoking point for these is too low.

What type of pork sausage do I use?

You can find plain, ground pork sausage packages with the other meats in the meat department of your grocery store. You can also use ground breakfast pork sausage, which will more likely be shelved with bacon and other breakfast meats. If you’re really in a pinch, you could even remove the casing from mild Italian sausage.

  • Step 1

    Prepare the sausage mix by breaking up the pork sausage into a bowl. Mix in the egg and cheddar cheese. Rip up the spinach into small pieces with your hands, and thoroughly combine all these ingredients together with the pepper, garlic powder, and onion powder as well.

    Heat a medium to large skillet on high heat with the vegetable oil. Test that the oil is hot enough by dropping in a very small piece of the sausage mix. When the oil is ready, form the sausage mix into small, bite-sized balls (you should get 3 per serving), and place them in the skillet. Use a spatula to press the sausage bites down slightly into the oil.

    Cook the sausage bites for about 3-4 minutes, then flip and finish cooking them through. You may transfer the cooked sausage bites to a paper towel to absorb some of the excess oil before eating. Enjoy the sausage bites after letting them cool for just a couple of minutes.

    Used ground pork. Chopped green onion vs onion powder. A little Parmesan along with the cheddar. Crushed up pork rinds added crunch & flavor. Served with a dab of Dijon. Very nice.

      I made these this morning using a package of breakfast sausage. I adjusted the amount of egg, spinach, cheese and spices. I cook them all and put the leftovers in a zip lock in the fridge so my family and I can have them again tomorrow morning. I had one with an over easy egg. My hubby had his with 2 over easy eggs and a couple of muffins. He is naturally thin and is only trying to add protein to his meals. I am the one that is trying to lose weight. :)

            Excellent recipe for the whole family. I have made these many times using mild Italian sausages (6) and remove from the casings then proceed with recipe. The other thing I have done is used ground pork and added oregano and parsley to make it taste the same. I have change up the spinach with green onion and it is also amazing. This is the easiest recipe and the bites are delicious! It is worth more than a 5...

                  Pork does not agree with me at times. Can I use turkey or vegan sausage instead? Will it taste just as good?

                            I make this once a month, and make enough for breakfast for the week. I also add a little green pepper. Delicious and perfect for a grab and go breakfast.

                              Way too salty for me, but I think I'll just have to try a different sausage and maybe this will make the recipe work out for me. Or maybe add less sausage to taste the rest of the ingredients a bit more. Also cooking on high WILL BURN them pretty badly so I would do medium next time. 😁 I'll have to try this one again!

                                  Did you google that question? There are mixed opinions, of course but there is no scientific evidence that supports that claim. Most recipies call for avacado or coconut oil, so there must be a reason why they chose vegetable oil for this recipe.
