    ¾ cup

  • Raw Egg

    Raw Egg

  • Banana Extract

    Banana Extract

    1 x 1 tsp

  • Vanilla Extract

    Vanilla Extract

    ½ teaspoon

  • Olive Oil

    Olive Oil

    1-½ tablespoon

  • Step 1

    Preheat an oven to 350 F. Spray loaf pan with nonstick cooking spray. Combine the almond flour, baking powder, sea salt, ground flax seeds and confectioner’s sugar together in a food processor. Pulse until smooth.

    Add in the eggs, extracts and olive oil. Pulse until smooth.

    Pour into prepared loaf pan and bake for 50-55 minutes until the center of the loaf is cooked through. Allow to cool for 20 minutes before running a knife around the edges of the loaf and unmolding the loaf.

    Slice into 16 slices.

    I was a little worried how runny the batter was but turned out perfect! I substituted a little of the swerve with some cocoa powder for a chocobanana bread 🙂

              This bread came out so great - much better than other almond flour breads I have made. I changed it up a little bit - 1) I am not Keto, so I put a single, really ripe banana in, 2) I didn't have any flax seed, so I put 3 TBS of Chia seeds in it. I also put an extra TBS of oil and about 1 TBS of Pumpkin Pie Seasoning. It is amazing. Will definitely be making it again!

                    Made as per recipe but with this and the courgette bread my eggs fall to the bottom as did the sugar. Had to cut off sugary bottom. It's edible as a breakfast with yoghurt and raspberries but not what I had envisaged.

                      The recipe calls for 3/4 cup swerve sugar but be careful with the oz/gr configuration. I went with the measuring cup and NOT the weight configurations.

                            I’m going to try and make it with only 3 eggs and 1 cup Greek yogurt instead of the other 3 eggs. Don’t want a eggy bread.

                              I made this and sprinkled Swerve Brown Sugar on the top before baking, it was delicious. My non Keto hubby enjoyed it as well. Will definitely make this again....yummy!
