Keto Tuna Fritters Lunchbox

Deliciously crispy tuna fritters combined with fresh veggies, crunchy seeds, and berries are among our favorite easy Keto lunch box recipes. This lovely lunchbox can be prepared in about 30 minutes, and you can store it in the fridge for days. It is a perfect option for a quick lunch or dinner you can share with your family (even the kids will enjoy our fritters with hidden veggies). This recipe yields 6 portions, but you can adjust it according to your needs. Add a drizzle of olive oil over veggies or sprinkle with your favorite herbs and spices. Enjoy!

How can you customize this recipe?

Most lunchbox recipes can easily be customized according to your needs. The tuna mixture will give you 12 small fritters, but feel free to adjust their size. You can add some hot sauce or some more cayenne to the tuna mixture for a little extra flavor or add your preferred herbs. You can also add your favorite fresh veggies and berries (such as roasted asparagus, peppers, or pecans). The options are truly endless here (always remember to log the ingredients separately).

Can this be prepared in the oven or an air fryer?

Absolutely! Prepare these tuna fritters in your oven or an air fryer for a healthier version. These should be baked for about 20 minutes at 350°F (175°C). If you wish to prepare them in your air fryer, you will need to line the basket with some parchment paper before adding the fritters. Cook for 10-12 minutes at 350°F (175°C).

    Drain the tuna and add to a bowl. Finely chop the spinach. Add the spinach, eggs, parmesan, coconut flour, onion powder, and cayenne to a bowl with tuna.

    Mix well to combine. The mixture will be slightly wet, but that's normal. Let it sit for 5-6 minutes.

    Heat the olive oil in a large pan over medium heat. Divide the mixture into 12 equal portions, about three tablespoons each. Shape into patties and fry each for 2-3 minutes per side.

    Roughly chop the lettuce. Cut the cherry tomatoes into quarters. Thinly slice the cucumber. Add the lettuce and cherry tomatoes to one side of your lunchbox and top with tomatoes and blueberries. Add the cucumber next to it. Add the red currants, pumpkin, and sunflower seeds next to the cucumber.

    Top the lettuce with the prepared tuna fritters. Optionally, garnish with some fresh parsley and lime wedges. Enjoy!
