Keto Salmon Avocado Boat Plate
These meals work great to meal prep as they can be eaten cold from the fridge. They also work great as a savory breakfast, a quick lunch or an easy dinner. There are so many tasty parts to this plate, I think you will be quite satisfied and pleased! It’s definitely a meal to look forward to. I like to use pastrami seasoned smoked salmon because it’s a little different and adds some spiciness. I halved the avocado and sprinkled it with a little salt before filling with the diced smoked salmon. The tartness of the sour cream pairs so well with the sweet avocado and fatty salmon!

Ingredients
Spinach & Arugula by Fresh Express

Extra Virgin Olive Oil
1 teaspoon
Avocado
1 each
Pastrami Wild Alaskan Sockeye Salmon Applewood Smoked by Private Selection
2 ounce
Green Onions
1 tablespoon, chopped
Sour Cream
1 tablespoon

Step 1
Add the arugula/spinach mix to a plate and drizzle on the olive oil. Add a sprinkle of salt.Step 2
Cut an avocado in half and remove the pit.Step 3
Add a pinch of salt to each half. Then top them with diced smoked salmon and green onions.Step 4
Add a dollop of sour cream to the plate as well.

Finally, I added 1teaspoon of fresh lime juice. It just adds 1g of carbs but a lot of flavor! Yum!!!

WOW, OMG....most likely the best, easiest, tastiest meal EVER. I could eat this breakfast, lunch and dinner. Used a splash of lime juice on avacados, splash of lemon juice on arugula and chopped a slice of jalapeño with the chives/green onions! Num nums!
