  • Banana Extract

  • Vanilla Extract

    ½ teaspoon

  • Extra Virgin Olive Oil

    1-½ tablespoon

  • Almonds, sliced

    Almonds, sliced

  • Almond flour

Recipe Steps

  • Step 1

    Preheat an oven to 300 F. Toast the sliced almonds for 10 minutes until very lightly browned. Then turn the oven up to 350 F.

    In the meantime pulse together dry ingredients (almond flour, baking powder, chia seeds, sea salt and brown sugar).

    Add in the eggs, extracts and olive oil and pulse again until very well combined.

    Evenly distribute batter to 12 cupcake tins filled with cupcake liners.

    Bake for 10 minutes and then sprinkle the almonds over the top of the muffins and then continue to bake them until fully cooked around 20-25 minutes total. They should be lightly browned.

        no need to roast almonds, they will toast during cooking. My muffins were fluffy until I stopped to put the almonds on.

            Something is now wrong with the carbs and calories calculations. Recipewriter, please recheck this recipe immediately!. Total carbs are used in the recipe carb calculation when it should be recipe net carbs, which comes to 14.4 for recipe and thus 1.2 net carbs per muffin. Total calories for the recipe ingredients comes to 1515, so 126.25 calories per muffin. I have no idea how they calculated 11,000+ and 994

                Wondering why they wouldn't just alter the recipe to say serving is 2 muffins instead or 1 3/4.... are you meant to just save a quarter of a muffin Till the next day?

                                          I love all the reviews! It really helps. Funny thing is, the desserts have TONS of reviews, salads, hardly any! Well, I did something different with this recipe: I deleted the banana extract and half the eggs and replaced them with - a banana! Bananas are high carb, but when each serving is only 1/12 of the recipe, what’s the harm? I adjusted my macros accordingly and the result was delish! Plenty of banana flavor lol! BTW, recipe calls for 3/4 cup Swerve, I used 1/2 cup and it was way sweet. Maybe because I don’t each much sugar to start with. Next time I’m reducing the Swerve to 1/3 cup!
