Keto Pork Meatballs With Cranberry Jam

The meatballs are packed with sweet dried cranberries, crunchy walnuts and aromatic herbs and served with a sweet cranberry jam for dipping.

Cranberries, Dried (Craisins)
1 tablespoon, whole pieces
Cranberries, Fresh
1 cup, whole pieces
Maple Flavored Syrup by Lakanto
1 tablespoon
Salt, Sea Salt

Black Pepper

Step 1
Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.Step 2
Finely chop the cranberries and fresh herbs. Add them to a mixing bowl along with the ground pork, Parmesan, olive oil, salt and pepper. Use your hands to mix together well.Step 3
Divide the mixture evenly into 12 meatballs.Step 4
Transfer the meatballs to the lined oven tray and bake for 18 minutes or until completely cooked through.Step 5
Whilst the meatballs are cooking, add the cranberries, syrup and water to a small pan. Bring the mixture to a boil and crush the cranberries with a fork.Step 6
Reduce to a simmer and cook for a further 2-3 minutes until you have a thick jam.Step 7
Skewer the meatballs with cocktail sticks.Step 8
Serve the meatballs alongside the cranberry jam.
