What is croque monsieur?
Croque monsieur is a decadent ham and cheese sandwich topped with bechamel and baked until golden and crispy. It is an upgraded version of the humble ham and cheese sandwich but enriched with more butter, heavy cream, and cheese. This Keto version is prepared using quick microwave bread, Keto bechamel sauce, ham, gruyere cheese, and parmesan cheese.
How to make the Keto toast bread?
Instead of opting for processed store-bought Keto bread, prepare this quick and healthy microwave bread. Whisk melted butter, egg, egg white, almond flour, baking powder, and salt in a bowl. Transfer it to a small square/rectangular container the size of bread slices, then microwave for 90-120 seconds until firm and cooked through. You can use it immediately or store it in a sealed bag/container in the fridge for 3 days. When ready to make this recipe, slice it in half, fill it with ham and gruyere cheese, top it with the bechamel sauce and parmesan cheese and bake until golden. You can use this bread in any sandwich recipe you prefer.
How to make Keto bechamel
Traditional bechamel sauce contains wheat flour as a thickening agent, which is not Keto-friendly. This recipe depends on the fats from the heavy cream, butter, and cheese for thickness. Add heavy cream and butter to a saucepan and bring to a simmer. Take the saucepan off the heat, add grated gruyere cheese, and whisk until melted—season with mustard, salt, and pepper to taste.

Step 1
Preheat your oven to 400F/200C and line a small baking dish with parchment paper. Add 1 ½ tbsp of melted butter, the egg, egg white, almond flour, salt, and baking powder to a bowl. Whisk until combined.Step 2
Pour into a square/rectangular container the size of toast bread. Wipe off any batter on the sides of the container. Microwave for 90-120 seconds until cooked. Take it out of the microwave and let it cool for a couple of minutes.Step 3
Meanwhile, to make the Keto bechamel, add the heavy cream to a saucepan. Add 1 tbsp of butter and bring to simmer over low heat. Let the mixture simmer for one minute- keep mixing.Step 4
Take the saucepan off the heat and add 4 tbsp of grated gruyere, black pepper, and mustard. Mix until the cheese is melted. Set the pan aside and start assembling.Step 5
Carefully remove the bread from the container and place it on a cutting board. Slice it open into 2 “toast” slices and lay them flat on the cutting board. Add a tablespoon of bechamel sauce to each piece and spread to the edges.Step 6
Lay 2 slices of ham on each piece of bread. Sprinkle 2 tbsp of grated gruyere on one piece. Flip the other part over to close the sandwich.Step 7
Transfer the sandwich to the baking dish and pour the remaining bechamel sauce on top. Spread the sauce and sprinkle the parmesan cheese. Transfer the baking dish to the oven.Step 8
Bake for 10 minutes until the cheese is golden and bubbly on top. Transfer to a plate and garnish with the chopped parsley. Serve!
