The Air Fryer is the perfect way to prepare the drumsticks as it allows for a deliciously browned crisped chicken skin. The marinate on the outside of the chicken also helps it to achieve a delicious Tandori-like appearance. The chicken is marinated in full-fat Greek yogurt, plenty of sea salt, garam masala, ground cumin, coriander, turmeric, curry powder, fresh garlic, and plenty of freshly squeezed lemon juice. Can I marinate the drumsticks?

Yes! We did not marinate the drumsticks in this recipe for ease. However, the meat itself will become more flavorful and tender if marinated overnight. So feel free to prep the drumsticks and marinate a day ahead and let them sit overnight in the fridge.

    Combine the ingredients to make the yogurt marinade for the drumsticks. Combine the full-fat yogurt, garam masala, cumin, coriander, turmeric, curry powder, grated garlic clove, and lemon juice.

    Toss the drumsticks in the yogurt mixture until they are fully coated. Decide if you want to marinate the drumsticks. If so, allow them to sit overnight in the fridge.

    Place the drumsticks in a single layer, not touching in the air fryer basket with the rack inside.

    Cook the drumsticks at 400 F for 30 minutes. Be sure to flip the drumsticks halfway through. Place a temperature probe inside the middle of the biggest drumstick. The temperature should be at least 165 F. If not, add a couple more minutes as necessary.
