Can you use other types of zucchini?
Absolutely! You can certainly experiment with different varieties to add visual interest and subtle flavor variations to your salad. Try using yellow zucchini or pattypan squash for a pop of color, or opt for heirloom varieties like Costata Romanesca or Eight Ball for a unique twist. No matter which type of zucchini you choose, be sure to slice it thinly for the best texture and presentation in this refreshing salad.
Are there any variations to this recipe?
Yes, there are endless possibilities for customizing this shaved zucchini salad to suit your taste preferences and dietary needs. Consider adding extra ingredients like cherry tomatoes, cucumber slices, or thinly sliced red onion for added freshness and crunch. For a protein boost, add grilled chicken breast, shrimp, or tofu to turn this salad into a satisfying main course. You can also experiment with different herbs and cheeses to customize the flavor profile, try swapping the feta cheese for goat cheese or Parmesan for a delicious variation.
How to store leftovers from this recipe?
If you happen to have any leftovers from this shaved zucchini salad (though it's so delicious, leftovers might be rare!), you can easily store them in an airtight container in the refrigerator for up to two days. Keep in mind that the zucchini ribbons may release some moisture as they sit, so you may want to drain any excess liquid before serving leftovers. For best results, store any toasted walnuts separately to maintain their crunchiness. When ready to enjoy, simply give the salad a quick toss to redistribute the flavors and serve it chilled or at room temperature for a refreshing and satisfying Keto-friendly meal.

Step 1
Finely shave the zucchini with either a vegetable peeler or a mandolin (I set the mandoline to ⅛ the inch). Gently combine the zucchini, lemon zest, lemon juice, olive oil, salt, and pepper in a large bowl. Toss lightly to combine, so the zucchini ribbons don’t break.Step 2
Marinate for 10 minutes. Place the zucchini in a bowl or plate. Twist the strands to create some circular shapes in the salad.Step 3
Toast the walnuts over medium heat in a non-stick pan for five minutes or until the nuts are golden brown. Top the zucchini with the toasted walnuts, feta cheese, and chopped parsley.

I was a little skeptical but it ended up being SO delicious! Definitely lemon-forward but I love lemon and the feta and toasted walnuts were a great topper. Everyone really liked it. Will be making this again, great for summertime too!

Very good, added some sautéed shrimp to if to make a light supper entrée. Will definitely make again.
