These chips are best enjoyed the day you make them, but you can store them in a ziploc bag after cooling. They do lose some integrity after 24 hours.

Step 1
Preheat an oven to 325 degrees. In a stand mixer, whip the egg whites until you have stiff peaks.Step 2
Gently whip into the egg whites the salt and cheddar cheese. Then, use a tablespoon to measure out 1 tablespoon of cloud mixture into 12 muffin tins that have been lightly sprayed with pan spray. If you are left with more than 12 TB of egg whites, use the tablespoon measurer to portion the rest evenly into the muffin tins. Spread the cloud mixture so each one fills its tin and creates a flat disc.Step 3
Bake the chips for 18 minutes or until the egg white have completely dried out and the edges are a golden brown. Enjoy while warm and crispy or enjoy after cooling!

I loved the idea of these. For social reasons I had to eat earlier than I like and was not looking forward to the hungry night ahead. With this recipe one serving is all the chips! I miss chips and was so excited I stood by the oven waiting for these beauties to finish. In the end they were not crispy. I baked them for 21 minutes but maybe that still wasn't enough? The bottoms of mine looked just like the picture but the tops puffed up even though I spread the mixture flat as instructed. While there was some crispness to the outer edges the inside was kind of chewy. Nonetheless they were tasty and satisfied my hunger. I used seasoned salt and added garlic powder. I definitely think I will try them again because in the end, while not what expected, they were tasty and a filling snack for so few carbs. Next time I think I will double the cheese amount (maybe freezing and processing the cheese before adding) and try cooking them a little longer.
