Our beautiful Keto rice pudding is a delicious Keto comfort food recipe you can prepare in no time. This creamy dessert is a fantastic treat for the entire family and requires just a few basic ingredients you probably already have in your kitchen. Please note that you can adjust the amount of sweetener and cinnamon according to your taste. This wonderful pudding can be served warm or cold with your favorite toppings – we added some Keto-friendly caramel sauce and fresh strawberries. You can also serve it with your favorite low-carb jam or other berries of choice. Enjoy!

Can I make this Keto rice pudding in advance?

Absolutely! This fantastic recipe can last a few days in the refrigerator in an airtight container so it is perfect to prepare in advance. You can gently reheat the pudding or serve it cold.

Ingredients

  • Cauliflower rice

    Cauliflower rice

    Add the heavy cream, almond milk, erythritol, and vanilla extract to a medium pot. Add the cinnamon and mix well. Bring to a boil over medium heat.

    Stir in the cauliflower rice. Cook for 10-12 minutes, stirring constantly. The cauliflower rice should be completely tender.

    Add the egg yolks to a bowl and whisk together. Add about three tablespoons of cooked cauliflower rice to temper the eggs (one tablespoon at a time). Mix well.

    Add the egg yolk mixture to the pot with cauliflower rice and mix well. Cover with the lid and cook for 2-3 minutes over low heat. Optionally, add more sweetener or cinnamon to taste.

    Divide the Keto rice pudding among serving bowls or glasses. Sprinkle more cinnamon on top and drizzle with your favorite Keto caramel sauce. Garnish with fresh strawberries and serve.
