Keto Chicken Burgers with Chermoula Aioli
You will love this burger if you love a high-protein meal! We have used naturally lean chicken, which amps up the protein content of this burger. The chicken burger patties have chopped chives and avocado oil mayo (to keep the burger moist and flavorful). We have smothered this burger with a chermoula aioli for delicious herb and spice notes. The Keto chicken burgers are also topped with freshly sliced tomato and crisp lettuce.
What is chermoula?
Chermoula is a North African sauce made from fresh herbs like cilantro and parsley and combined with garlic, spices, ginger, and citrus.

Yes! We have cooked these burgers in a cast-iron skillet, but you can also shape them into a disc and cook them on the grill for a chargrilled flavor.

Step 1
Prepare the tomato by slicing off the top and slicing the tomato into four equal portions. Wash the lettuce leaves and spin them dry. Set these both aside. Add the ground chicken meat to the bowl of a stand mixer fitted with a paddle attachment. Add the chopped chives, 1 ½ tsp sea salt, and ¼ cup of avocado oil mayo. Mix well until combined, about 1 minute. The mixture will look pretty loose; this is normal for ground chicken.Step 2
Preheat a large seasoned cast iron or blue steel skillet over medium-high heat until hot. Add in ½ tsp of lard and swirl the pan to coat it. Use a 3 oz cookie scoop to portion the ground chicken into patties. Place three scoops into the heated pan evenly spaced.Step 3
Use a wide, flat spatula to spread out each patty until they are about 1/2 “ thick. Allow the patties to cook on the first side until golden brown, about 2 minutes. Flip the patties and repeat on the other side until they are fully cooked. Remove the burgers from the heat.Step 4
To make the chermoula aioli, combine the cilantro, parsley, ¼ cup avocado oil mayo, olive oil, the juice of one lemon, chili flakes, smoked paprika, and ginger in a small food processor. Process for a couple of minutes until smooth. Taste and add sea salt to taste.Step 5
If using a Keto hamburger bun, slice the buns in half. Preheat a large nonstick skillet over medium heat until hot. Add one tablespoon of butter for each batch of buns. A large skillet should fit two buns sliced in half. Cook over low heat until the bottom of the buns are nicely browned.Step 6
Top the buns with the chicken burger patties, then layer on a slice of tomato, a lettuce leaf, and a few slices of red onion. Top with the other half of the hamburger bun and serve immediately.
