  • Step 1

    Heat a tablespoon of olive oil in a skillet over a low/medium heat. Mince the garlic and thinly slice the radish into matchstick size strips. Add the pan and cook gently until tender.

    Add the remaining oil and ground spices.

    Add the cauliflower rice, season and stir well to combine. Cook over a medium heat for a minute or so, until the cauliflower is tender.

    Make a well in the center of the skillet. Beat the egg and pour into the center. Allow the egg to begin cooking for a moment then scramble into the rice, mixing everything together. Continue to cook until the egg is cooked to preference.

    Scatter with fresh parsley to serve.

    Excellent ! The spices were perfect. Adjustment: I made it with hearts of palm rice, instead of cauliflower rice, and 2 eggs.
