Seared steak is a staple in a Carnivore diet, but you can keep it interesting by adding various toppings to your meat, like this cheesy, creamy, and crunchy parmesan crust. This addition absolutely transforms a simple steak into an outstanding umami meal straight out of the best steakhouse. We can all agree that Carnivore diet recipes are best when they’re quick and easy, and thankfully, creating the parmesan crust adds 5 minutes to the cooking process.

Is parmesan cheese permitted in a Carnivore diet?

Usually, Carnivore diet recipes allow some dairy, preferably A2, and are low-lactose/lactose-free. You can swap the parmesan for mozzarella, asiago, Monterey Jack, or Granada Padano.

How to make the parmesan topping?

The steak's topping consists of a creamy base and a crispy topping—the former consists of cream cheese, an egg yolk, and parmesan cheese. The latter is made by mixing grated parmesan cheese, pork rind crumbs, and melted butter until a rough crumb forms. After searing the steak on both sides, spread the creamy element and top it with the crumb. Bake for 2-3 minutes until golden and crispy. You can use this parmesan topping on other meats like chicken breasts, lamb chops, pork chops, or salmon fillet.

What is the doneness of this steak?

If you follow this recipe to a T, you will end up with medium- steak if its thickness is 3/4 inches. If you prefer your beef cooked to medium-rare, reduce the cooking time, and if you like it to be medium-well, add 2-3 minutes of cooking time in the oven. Keep in mind that the thickness will change the cooking time.

Can you make this steak recipe using another steak cut?

Absolutely! Instead of sirloin, you can use T-bone, ribeye, New York steak, or tenderloin. Keep in mind that the cooking time will differ accordingly.

    Preheat your oven and broiler to 500F/250C. To prepare the creamy topping, add 2 tbsp of parmesan cheese, cream cheese, and egg yolk to a bowl. Mix to combine.

    To prepare the crust, add the pork rind crumb and 2 tbsp of parmesan cheese to a bowl. Whisk to combine, then add 1 tbsp of melted butter. Mix until crumbly.

    Season the steaks with salt and pepper on both sides. Place a cast-iron skillet on high heat. Once the skillet is scorching hot, add 1 tbsp of butter and let it melt.

    Add the steaks and sear for 2 minutes. Flip and sear the other side for 1 minute. Spread the creamy mixture, then top with the crumb.

    Transfer the pan to the oven. Cook for 3-4 minutes until the crust is golden and the steak is cooked to your desired done-ness. Take the skillet out of the oven.
