Step 1
Cut the feta into chunks. Add the cheese to a bowl. Pour in the olive oil and add the orange zest, fresh mint, peppercorn, and red pepper flakes. Toss to combine and refrigerate for at least 30 minutes.Step 2
Using a sharp knife, cut the zucchini in half lengthwise. Cut each piece into bite-sized pieces. Set it aside.Step 3
Roughly chop the arugula. Place on serving plates and add the spinach. Top with the chopped zucchini.Step 4
Add the marinated feta cheese and optionally garnish with some more fresh mint. Season with some salt and pepper to taste, or add some more olive oil. Serve immediately.
