AIP Tiger Nut Pancakes

These pancakes are one of the best AIP recipes, prepared in under 20-minutes. They are perfect for many diets since they’re nut-free, grain-free, egg-free, and dairy-free. This recipe makes 2 servings, but you can easily double or triple it to feed more people.

Can you have pancakes on the AIP diet?

Most pancake recipes contain grains, nut flours, dairy, or eggs, which are not AIP compliant. AIP stands for the autoimmune protocol, an elimination diet that aims to determine food allergies and sensitivities in those suffering from autoimmunity. This diet is based on the Paleo diet and removes all potentially problematic foods, including grains, dairy, eggs, legumes, beans, nuts, seeds, nightshades, processed foods, and foods with chemicals and additives. As long as the pancakes are prepared using AIP-compliant ingredients, you can include them in your diet.

What is tigernut flour?

Tigernut flour is made from peeled, finely ground tigernuts. As confusing as it sounds, tigernuts are not nuts; they are a small root vegetable. The flour is naturally sweet, with a nutty flavor, making it perfect for AIP baking.

Why are we using gelatin in this recipe?

Making grain-free pancakes that don’t fall apart isn’t an easy task. Take away the eggs, and you have a difficult mission ahead of you. Fortunately, gelatin can be used in AIP recipes as a binder, and it works well. However, it will result in pancakes that are a bit chewy rather than fluffy.

What can you top these pancakes with?

Since this recipe is specific for the AIP diet, toppings can be tricky. You can’t use artificially flavored or sweetened syrups, nor can you use butter. You can however top these AIP pancakes with maple syrup, coconut yogurt, fresh fruit, or coconut chips.

  • Step 1

    Add the gelatin powder to a bowl with 2 tbsp cold water. Let the gelatin bloom for a couple of minutes. Add the boiling water and whisk.

    Place the bowl in the microwave and heat for 10 seconds until the gelatin is dissolved. Add the oil, coconut yogurt, and vinegar and whisk until incorporated. Add the tiger nut flour, tapioca flour, baking soda, coconut sugar, and salt.

    Add ½ tbsp of oil to a pan and place it over medium heat. For each pancake, add 2 tbsp of batter to the pan. You can cook 3-4 pancakes at a time, depending on your pan’s size.

    Cook for 30 seconds until the edges are golden, then flip and cook for another 20 seconds. Repeat until you have 8 pancakes. Divide the pancakes into 2 plates and serve with the toppings of your choice.
