Hearts of palm pasta is a beautiful alternative to regular Keto pasta recipes. It's a neutral-tasting pasta that pairs perfectly with your favorite pasta sauces. Hearts of palm pasta also takes little time to cook, making it an excellent option for a quick lunch or dinner. For this dish, we prepared our pasta with some creamy mushroom and goat cheese sauce with a small amount of black pepper for extra flavor. This wonderful recipe can last for a few days in the fridge, making it a perfect lunch to prepare in advance. Serve your pasta with some dried chives or shredded parmesan. Enjoy!

Goat cheese

Step 1
Rinse the mushrooms thoroughly under cold running water. Place them on a cutting board. Using a sharp knife, slice the mushrooms.Step 2
Melt the butter in a large pan over medium heat. Add the sliced mushrooms and dried chives. Cook for 10-12 minutes, stirring occasionally.Step 3
Add the goat cheese, heavy cream, and chicken stock cube. Mix well to combine. Cook for 15 minutes, stirring occasionally.Step 4
When done, add the black pepper and mix well. Taste and optionally season with salt. Stir in the hearts of palm pasta and cook for 2-3 minutes.Step 5
Serve the pasta immediately. Optionally add some more salt or pepper to taste. Garnish with dried chives.

I used shirataki tofu fettuccine noodles instead but otherwise kept it the same and it was delicious!

I am a HUGE fan of hearts of palm "pasta"! So much more convenient than dealing with spiralized zucchini (which I just can't get my tastebuds to be enthusiastic about - haha!). Haven't tried the recipe yet, but when I do garlic will definitely be an add-in.
