Keto Crock Pot BBQ Pulled Chicken

Make dinner time super easy with this crock pot Keto BBQ pulled chicken recipe. First, you’ll make a homemade tangy Carolina BBQ sauce. It’s mild, just a little sweet, and packs a punch for whatever you cook it with. Pour all the sauce into a crock pot with chicken breasts, then let the crock pot do the rest of the work. Once the chicken has cooked for long enough in the sauce, you can pull it apart with a pair of forks. Serve the pulled chicken as-is for Low Carb meal prepping, or make it a meal with buns, coleslaw, and your favorite sandwich toppings.

Is BBQ sauce Keto?

Not all BBQ sauce is Keto-friendly. Many types of sauce you can buy bottled at the store are going to have lots of added sugar and a lot of carbohydrates. This recipe uses a homemade Keto BBQ sauce that’s low in carbs. It only uses Keto-friendly sugar substitutes too. Try using this Carolina-style BBQ sauce in your other Keto BBQ recipes as well!

What type of sugar-free ketchup should I use?

You can choose your preferred brand of sugar-free ketchup to use to make the BBQ sauce in this recipe. Look for ketchup that is made only with natural stevia instead of non-Keto sugar or sugar substitutes. If you don’t want to use ketchup, you can also use plain tomato sauce. You may need to add more sweetener and salt to the recipe if you choose tomato sauce.

Ways to enjoy Keto BBQ pulled chicken

For a very Low Carb meal, you can eat the Keto BBQ Pulled chicken as is, or add a Low Carb side dish, like sauteed vegetables or one of Carb Manager’s side dish recipes. Alternatively, add the BBQ pulled chicken to a Keto hamburger bun to make a sandwich and add mayonnaise and cheese for more fat! Top off salads or even pizzas with pulled BBQ chicken.

    Combine your preferred brand of sugar-free ketchup in a large pot with dijon mustard, apple cider vinegar, chicken broth, Worcestershire sauce, and brown sugar substitute. Gently whisk the ingredients together and cover the pot with a lid. Heat the ingredients until they start to bubble.

    Reduce the heat to a low setting and whisk the ingredients together again. Stir in salt, pepper, onion powder, garlic powder, and paprika. Taste the sauce and adjust the seasonings to your liking. If you want the sauce to be sweeter, you can add drops of liquid stevia.

    Let the sauce cool for about 10 minutes before you use it. Next, you’ll need to pour just a small amount of it in the bottom of a crock pot or slow cooker, and spread it across the bottom. Add the whole, boneless, skinless chicken breasts to the crock pot. Pour all of the BBQ sauce over the chicken.

    Use a pair of tongs to rotate the chicken breasts and get them coated in the sauce. Cook on high heat for approximately 7-8 hours or until the chicken easily pulls apart. You can also cook on low heat for about 10 hours. Use a pair of forks to pull all the chicken into shreds and stir all the chicken together with the sauce.
