Ingredients

  • Coconut Milk

Recipe Steps

  • Step 1

    Grate the ginger, peel the garlic and finely slice the lemongrass, chilli and the shallot. Add to the food processor along with the cumin and the juice and zest of half a lime. Season with salt and pepper to taste.

    Pulse the ingredients together until finely chopped, then add ½ tablespoon of coconut oil. Pulse continuously to form a thick paste, scraping the sides of the blender down as you go – this may take 5 minutes of so.

    Heat the remaining coconut oil in a large saucepan over a low/medium heat. Add the curry paste and cook gently for 4-5 minutes until fragrant.

    Add the coconut milk and the stock to the pan and stir to combine. Bring to a boil and simmer for 4-5 minutes.

    Add the green beans and simmer for 2-3 minutes until tender.

    Add the shrimp and spinach and cook for a further 3-4 minutes or until the prawns are piping hot and cooked through and the spinach has wilted.

    Garnish with chopped cilantro to serve.

      Thank you so much for posting. Day 1 of Keto.. I’ve been looking forward to it & it’s delicious. You don’t mention putting the cilantro in the paste but I can see it on the pic. I put some in anyway.

      9 carbs is NOT low carb when you only get 12 carbs a day to begin with!

        I'm at 17 carbs a day. My hubby changes the recipe to lower the carbs. The Green curry paste, finely chopped ginger, fish sauce and coconut milk and shrimp is our base, use any lower carb veggies. We don't use a processor we like to bite into veggies. We also add a little heat with hot oil chili flakes.

        Tamari is widely available at most grocers... it’s just a more concentrated (flavorful) version of soy sauce.

        Hi! There is also a noodle/rice called Japanese Shirataki noodles. They are made from the konjac plant. They are 97% water and 3% soluble fiber (called glucomannan) plus a natural calcium additive. They are very healthy for you. One serving is 1 carb and 5 calories. The Miracle Noodles brand is the most popular. It comes in several shapes - rice, angel hair, etc. I have found other generic brands which are exactly the same but MUCH less expensive. These noodles, too, have a really bad smell when the plastic bag they are packaged (wet) in is opened. Follow the instructions to the letter and even Google helpful hints on how to get rid of the smell... They are worth it!!!

        Hi there! Don't worry, you will be an old pro like me in no time. (I started last week.) You can ask your grocer for tamari soy sauce, they can order it for you if they don't carry it. The carb free noodles are called shirataki noodles. They are a soy based product that literally have 20 calories in a bag! You should be able to find them in the refrigerated produce section, along with tofu, kimchi and such. The smell is rather overpowering at first, so make sure to rinse and drain them well. These noodles lend well to stir fries. Good luck!
