While a traditional pesto uses pine nuts and basil, this pesto pairs dill and walnuts together. The pesto can be doubled or tripled and kept around as a condiment to use on meat and salads.

  • Extra Virgin Olive Oil

  • Step 1

    Pat a portion of salmon dry with a paper towel and season the salmon with 1/8 tsp. salt and pepper.

    Heat a tablespoon of butter in a pan over medium-high heat. Once hot, press the salmon skin side down in the pan. Turn the heat to medium or medium-low and allow the salmon to cook skin side down for 5-7 minutes.

    Carefully flip the salmon over so the skin stays intact. Cook for an additional 2-3 minutes, then allow the salmon to rest while you prepare the pesto.

    Finely chop the the walnuts, parsley, dill, and garlic and place in a bowl. Add the lemon, olive oil, ⅛ tsp. salt and black pepper.

    Pour the pesto on top of the salmon and enjoy!

      This was surprisingly fantastic! Will make this again for sure! My only tip would be put the parsley, walnuts, dill, garlic, lemon and oil in a blender to really get a nice consistency.
