If you are looking for more easy ways to add fish to your diet, this recipe for Keto Slow Cooker Fish Chowder is an excellent choice. White onion and olive oil start the base of this chowder, along with heavy cream and some water to make it broth-like. Wild-caught cod is added to the slower cooker along with spices and seasonings like salt, black pepper, and paprika. Since non-Keto recipes for fish chowder call for potatoes, we have added cauliflower florets instead. To make the cauliflower more "potato"-like, we have cut them into larger pieces, so they don't dissolve into the chowder, but are the perfect texture by the time the soup is finished cooking. The soup is topped with a delicious mixture of diced celery, red onion, and sliced fresh scallions. This gives the soup a nicely needed pop of color and texture. If you can, choose to cut your own cauliflower head so you can cut the florets into larger pieces (about 2" to 2 ½" large). If you want the convenience of pre-cut cauliflower florets, that is fine too, be sure to purchase ones that are close to the size mentioned.

Is arrowroot powder Keto?

Arrowroot starch is generally accepted on the Keto diet in small quantities, as is used in this recipe. It is used as a thickener and is never consumed in large quantities. However, if you want to substitute the arrowroot starch with xanthan gum, you can. However, xanthan only works when the dish is cooling, whereas arrowroot will keep the chowder thickened when it is hot. If using xanthan, a little xanthan goes a long way!

    Add the diced white onion and olive oil to the bottom of a 6-quart slow cooker. Then, add in the heavy cream and water. Stir the water and the cream together. Add in the arrowroot powder and stir well.

    Add in the wild-caught cod. It is best if you add the fish in frozen as it gives it a slight cushion from the low cook time of the slow cooker. Sprinkle the mixture with kosher salt, black pepper, and paprika. Add in the cauliflower florets, which have been cut into 2" to 2 ½” pieces. Set the slow cooker on high heat for 4 hours.

    While the chowder is cooking, prepare the topping. Combine finely diced celery, red onion, and sliced green onion. Once the time has elapsed on the chowder, divide it among the bowls and top it with the celery mixture.

    Absolutely delicious! Love the fresh toppings. Made in Dutch oven in stove. Put on 300 went out to run some errands and when got home house smelled amazing and it tasted even better.
