Keto Hungarian Stuffed Peppers

Almost every culture has a form of stuffed peppers. The Hungarian version is made with wax peppers, and the filling can vary. This recipe is made with ground beef, strongly seasoned with paprika, cabbage, and cauliflower rice (instead of traditional white rice). While this Keto recipe may stray from traditional Hungarian cuisine, it makes for a delicious lunch or dinner!

    Preheat the oven to 360 degrees. In a shallow skillet, combine the ground beef, cauliflower rice, salt, pepper, paprika, and garlic powder. Cook the ingredients on high heat until the beef is cooked through.

    Stir in the cabbage and beef broth. Continue cooking the skillet on high heat until the liquid is absorbed and the beef has browned slightly.

    Prepare the wax peppers by removing the tops and hollowing out the centers.

    Spoon the cooked filling into each pepper. Gently pack the peppers and fill them as much as possible. Arrange the stuffed peppers in an oven-safe baking dish. Spoon any remaining filling in the skillet over the peppers.

    Cover the baking dish with foil, and bake for 40 minutes until the peppers are soft and cooked through. Enjoy!

    Tasty and nice quick prep. I love salt but found it a little salty, next time I'll reduce it a bit. The rest of the spices were right on. I also substituted cabbage with fresh spinach, just a preference. All and all a solid recipe.

      Delish I cut off bottom of peppers slightly to help them stand up Then steamed lightly before cooking in oven to reduce cooking time and garentee tenderness
