Keto Cheese and Bacon Stuffed Mushrooms
These delicious Keto stuffed mushrooms are loaded with flavor and fats. Our tender low carb mushrooms are filled with a blend of cream cheese, mayonnaise, grated cheddar, crispy bacon, fragrant garlic, and chopped scallions. Once the mushrooms are stuffed with the creamy cheese filling, they are transferred to the oven to bake until bubbling and golden. Perfect served alongside a hearty Keto salad for lunch or dinner or as an appetizer.
Can I Use a Different Cheese?
We have used grated cheddar cheese in our Keto stuffed mushroom filling. If preferred, you could swap this for an alternative shredded cheese such as Monterey Jack or even some grated mozzarella for an extra oozy filling. You could also use a combination of shredded cheeses. Please be sure to adjust your macros to account for any changes made to the original recipe.
Can I Make These Vegetarian?
We have added chopped crispy bacon pieces to our low carb mushroom filling for extra fats and flavor. If you would like to make the recipe vegetarian, you can simply omit the bacon and add extra cheese if desired. You could also stir some chopped nuts into the cheese if you wish for some added texture and Keto-friendly fats.

Step 1
Heat half the oil in a skillet over a medium heat. Add the bacon and cook through completely until golden. Set aside to cool, then roughly chop or crumble into small pieces.Step 2
Preheat the oven to 350 degrees Fahrenheit. Wipe the mushrooms clean and carefully remove the stalks. Use a teaspoon to carefully scoop the gills from the center of the mushrooms and discard. Brush the mushrooms all over with the remaining oil.Step 3
Add the mayonnaise, cream cheese, chopped bacon, and grated cheddar to a mixing bowl. Crush the garlic and roughly chop the scallions. Add the garlic and scallions to the bowl and season with salt and pepper. Stir well to combine.Step 4
Divide the creamy cheese and bacon mixture evenly between the mushrooms. Transfer to the oven and bake for 12 minutes or until the mushrooms are tender and the filling is piping hot through and golden on top.
