Add the avocado flesh to a food processor along with the sour cream, lemon juice, salt and pepper. Blend well to combine. Transfer to a mixing bowl.Step 2
Finely dice the tomatoes and add to the mixing bowl along with the red onion and half the cheese. Stir well.Step 3
