Sometimes I get a craving for pancakes! This is a great alternative to the real deal. Make sure to whip the egg whites to a stiff peak. This will ensure your pancakes will be very fluffy...or else they will be flat! Once egg whites are at a stiff peak, sprinkle the flour mixture on top and fold in the egg whites so you keep as much air as possible. Also use long sprinkles not the round kind or else they will sink to the bottom of the batter.

  • Step 1

    Sift together coconut flour, baking powder and salt together. Add in milk and vanilla extract and mix to combine.

    Separate three eggs. Add egg whites to a mixer bowl and beat until stiff peaks form. Fold to combine, adding sprinkles, being very careful to retain all the air in the egg whites. Do not beat the mixture!

    Place a medium nonstick saute pan on medium heat. Wait until the pan is nice and hot. This is key or else the pancakes will stick. Add ½ teaspoon coconut oil to hot pan. Add pancakes in roughly 2 oz scoops. Cook on the first side for about 2 minutes until the bottom is golden brown. Flip and cook for another 1-2 minutes. These pancakes are super delicate so make sure the bottom is nice and brown before flipping so they hold together. Another trick is to place only a few scoops in the pan at one time (maybe only two).

    In the meantime, mix the coconut milk and stevia drops together. This will be the syrup for the pancakes!

    Serve hot pancakes with coconut glaze on top!

    This is a great substitute for pancakes. I think the secret is to follow the recipe carefully. I doubled the recipe. Mine were fluffy. I didn't use sprinkles and added orange extract in the coconut cream to the syrup portion of the recipe. Also, If you add the carbs for the entire recipe, it's quite low.

      Tried to like this recipe yet :-( . For a recipe that has so many steps, the pancakes turned out runny, difficult to manage, they ended up being too thin, and the taste was not even that good. All of that and too many carbs for my day :-/ .

          Just awful. The texture is sandy and gummy at the same time, and they just taste like eggs.

            These turned out beautiful which made tasting them very deceiving. Very grainy and not a good flavor at all. Not making again

              1/2 cup milk to 3T flour made the batter going into the whites very runny and the “pancakes” super hard to flip and keep together. I will try again with less milk same flour so I have a batter going into the egg whites not a liquid. Flavor was subtle but tasty.

                  Is there a way to print recipes WITHOUT the pictures. I like having the step by step pictures on my phone in case I have a question but it wastes too much ink/paper to print.

                    I did almond extract instead of vanilla gave an amaretto taste that was pretty good. Next time I may use almond flour instead of coconut though.

                      Very complicated, way over on my carbs for the whole day. And didn’t taste great. Terribly ugly and hard to keep together. 👎🏼

                          I tried desperately to like these, but I can honestly say that I will never attempt to make these again. I was hoping the trouble I had with how delicate they are would be paid off with great flavor. I was wrong. My 10 year old son liked them enough to finish off my plate, however.
