Keto Slow Cooked Pork Lomitos
This dish is so flavorful and goes wonderfully with cauliflower rice. Pair this with any keto friendly side like a cucumber avocado salad! It’s super simple to prepare because everything is thrown together in the slow cooker. You can literally sit-it-and-forget-it! Use more or less chilies depending on how much spice you can handle!

Ingredients
Dried Red Chili by Generic

Olive Oil
1 tablespoon
White Onions
1 cup, chopped
Garlic
3 clove

Boneless Pork Sirloin Roast by Smithfield
2-½ pound

Step 1
Soak dried chilies in hot water for 15 minutes.Step 2
Dice white onion into a small dice. Smash and peel garlic cloves. Heat a large saute pan over medium-high heat until hot. Add olive oil and then add onions and garlic cloves. Cook until browned.Step 3
Add onions and garlic into a blender proof container. Add drained chilies, salt, and diced tomatoes. Blend until pureed, but still coarse.Step 4
Add another tablespoon of olive oil to the hot pan and add in diced pork. Browning the pork on all sides.Step 5
Once pork is browned place in a slow cooker, along with tomato puree and a sprig of parsley. Cook on HIGH for 4 hours or LOW for 8 in a 4 quart slow cooker.

I didn't make it in a slow-cooker because I didn't have that such time, but I didn't find it that great flavourwise. The meat was tender but not a lot of flavour. I'll have to try this one again since others left great reviews.

Although my husband is not doing Keto, we both enjoyed this dish which is great for me as I don’t have to cook two main dishes for dinner! Bonus! It was simple, and the meat came out fall-apart tender! This was the first time I had made cauliflower rice, and it was delicious! I cooked the cauliflower rice in the same cast iron pan in which I had cooked the meat. I also added a bit of garlic salt, onion powder, Himalayan pink salt, and a generous amount of cracked black pepper. I served the pork on top of the rice and topped it off with a bit of fresh grated Parmesan. Yum Yum!
