These Keto Cheese Waffles with Egg and Prosciutto make for a protein-packed breakfast that can also be taken on the go. A cheesy batter made from blending eggs and mozzarella cheese is poured into a small waffle iron. This layer is topped with a piece of prosciutto and a sprinkling of more mozzarella cheese. The result is a crispy, meaty, salty waffle that will surely hit your Keto cravings just right! They would even be delicious topped with maple syrup if you were looking for a sweet and salty combo.

How can I save leftover waffles?

The waffles hold up wonderfully to being frozen. Simply place them into a freezer zip lock bag and then into the freezer. Once ready to reheat, put them in a toaster oven or in the microwave.

Can I use other types of cured meats?

Yes! Feel free to use other kinds of cured meats like coppa, salami, soppressata, and more. The trick is to trim the cured meat down to the size of the waffle iron.

What kind of eggs should I use?

Pasture-raised eggs are the most nutritious eggs as they are high in omega 3 fatty acids and can have up to almost twice the amount of Vitamin E compared to conventional eggs.

  • Raw egg

  • Mozzarella cheese

    Mozzarella cheese

  • Prosciutto

    Prosciutto

  • Step 1

    To begin, plug in a mini waffle iron and allow it to come up to temperature while you prepare the waffle batter.

    Blend the eggs and 1 cup of mozzarella cheese together with an immersion blender or mini food processor until smooth. Have the prosciutto at hand ready to go as well as the butter which has been melted in a small bowl. The prosciutto will need to be cut in half.

    Brush the waffle iron with little butter using a silicone brush.

      Tried these for the first time today. I did not put in a full two oz of mozzarella I did maybe 1 1/2. Instead of adding more mozzarella on the top I added some cheddar jack cheese. I used Wholesome yum keto maple syrup. Winner winner!!! Loved this recipe.

      Delicious! Full disclosure.... I mistakenly mixed the entire 2 cups of Moz with the eggs... Even so, by measuring the batter a little less than 1/4 C per waffle and letting it cook 6 minutes, it produced a wonderful, thicker, crispy waffle and I got 8 instead of 7. Of course I split the ham into 8 equal pieces also and added a pinch of salt. I only eat 2 meals a day, so 4 waffles and some Lakonta maple flavored syrup made for a satisfying and complete mid day meal.

        These are AMAZING! The texture is even similar to an actual waffle. They freeze super well. I reheat mine in the microwave.
