This chaffle is so crispy and delicious! It is made even more delicious topped with Mexican chihuahua cheese, scrambled egg and Canadian bacon to make a fun breakfast-style pizza. Feel free to sub the cheese for another shredded cheese and Canadian bacon for sausage crumbles or regular bacon.

  • Queso Chihuahua (Chihuahua Cheese)

    6 tablespoon, shredded

  • Step 1

    Scramble one egg and add a pinch of salt. In a small nonstick saute pan, cook the egg in avocado oil until softly scrambled. Set aside.

    Preheat a waffle iron on medium-high heat. Combine two eggs, coconut flour, mayo and baking powder together in a mixing bowl.

    Spray waffle iron with high temp grill non stick spray. Pour in waffle batter and cook in iron according to directions.

    Remove waffle from the iron.

    Top with shredded cheese, diced Canadian bacon and scrambled egg.

    Place waffle on a baking sheet under a broil until the cheese is melted.

    Quick and easy. As a person who has to be at work early I try to find meals that are both quick and simple as well as good. This by far met the mark!! I can get this together in a flash and sun get out the door on time. I actually used turkey pepperoni and one thin slice of turkey ham which really gave it the “pizza” feel!!

      You can add " ANY topping and adjust macros accordingly. Don't want meat, don't use it. Like broccoli, use it. That simple. Love this recipe. Easy, adjustable to my taste. Yum

        I'm so lost on the serving ? At top it says 1 serving , and shows One chaffle. But yet under recipe info it says 2 servings. What do I count ? The whole thing for one serving or will the whole thing be 2 servings and only 1/2 be one serving ???

          They made a full size waffle. Cut in half for one serving or reduce the ingredients in half to make as a chaffle.

          I simply remove one ingredient to make it vegetarian and still have a delicious meal.
