Keto Style Ukoy
These Keto style ukoy are our low carb take on this classic Filipino dish. Juicy shrimp are combined with cauliflower rice and onion in a seasoned low carb batter, then pan-fried until golden. This Keto Pinoy recipe is perfect for serving with your favorite low carb sides or spicy dipping sauce.
What Are Ukoy?
Traditional Ukoy are made with a combination of shrimp and vegetables, coated in a corn flour batter, and spiced with annatto powder. Once prepared, the batter coated shrimp are fried to create crisp and golden fritters. Our Keto take on this Filipino recipe uses a low carb batter of ground almonds and coconut flour, bound with egg. The consistency isn’t as crisp and crunchy as the traditional dish but provides a great texture, full of flavor - and minus the carbs!
How to Season
Traditional ukoy are seasoned with annatto - a bright orange/red powder, ground from achiote seeds. You may use annatto powder if it is accessible to you, however as a replacement, we have used a blend of turmeric and paprika. This not only adds a golden color to the fritters but also provides a hint of spice. Please be sure to adjust your macros to account for any changes made to the recipe.

Step 1
Add the ground almonds, coconut flour, cauliflower rice, paprika, turmeric, salt, and pepper to a mixing bowl. Stir well to combine. You may add more spices and seasonings as desired to suit your personal taste.Step 2
Crack the eggs into the bowl with the dry ingredients. Mix everything together well to combine. The mixture will be a fairly thick batter.Step 3
Finely dice the onion. Add the shrimp to the bowl along with the diced onion. Mix everything together thoroughly so that the onion and shrimp are evenly distributed throughout the batter.Step 4
Heat the olive oil in a large skillet over a medium/high heat. Once hot, scoop a generously heaped tablespoon of the prawn mixture into the skillet. Press the mixture down with the back of the spoon to create your fritter shape. Repeat this with the remaining mixture. You should get four fritters from the batter.Step 5
Fry the fritters for 3 minutes on the first side until golden. Carefully flip them over and fry the second side for a further 3 minutes. The fritters should be golden brown all over, completely cooked through and piping hot in the center. Serve with your preferred low carb sides or Keto dipping sauce.
