Keto Sweet Sourdough Bread

Our Keto sweet sourdough bread is reminiscent of a sugar-coated donut! A fathead dough made using shredded cheese and cream cheese is used as the base of this recipe. Sweetener is added to the dough mixture. Then, the dough is formed into a loaf shape and baked with an egg wash on top. After the egg wash is added, granulated sweetener is sprinkled over the top. This process is repeated several times to result in a browned loaf, crusted with sparkling sweetener. The bread is easy to slice once it has cooled down and is the perfect carrier for Keto-friendly chocolate hazelnut spread, almond butter, or butter. You will love this Keto sourdough bread that you can enjoy smothered with all kinds of Low Carb condiments like grass-fed butter, sugar-free jam or cream cheese.

What if I have a small food processor?

If you have a small food processor, you will want to divide the recipe in half so your food processor can handle the load. Once both halves are mixed, you can combine them in a large mixing bowl.

What is the best sweetener to use in this recipe?

You will want to use a granulated sweetener for the topping, like granulated erythritol. You can use powdered or granulated sweeteners for the dough.

How long does this take to bake?

Due to this bread's gluten-free and Keto nature, the bake time is long. You will want to bake the bread for an hour or more to achieve the desired coloring with the egg wash. Then, the oven temperature is lowered, and the loaf is cooked for another hour until it is baked through.

Why apple cider vinegar?

The vinegar’s use is twofold in this recipe. First, it helps to give the “sourdough” flavor. Since wheat in prohibited in Keto diets, you cannot make a Low Carb sourdough bread without it. Secondly, apple cider vinegar creates a fermented sour taste, so be sure to use apple cider vinegar with the mother for the most authentic sour flavor!

  • Step 1

    Preheat an oven to 350 F. Line a baking sheet with parchment paper. Microwave the cream cheese and cheese in the microwave for 1 minute just to soften it. It does not need to be melted.

    Then, place the cheeses into the food processor. Add four eggs, baking soda, baking powder, both flours, and apple cider vinegar. Blend the ingredients in the food processor until smooth.

    Place the dough on the parchment-lined baking sheet. Divide the dough into two pieces so it will chill faster. Chill for 20 minutes or so before forming. Doing so will make the dough easier to work with and less tacky.

    Form the dough into a loaf shape—Bake for 45 minutes. Then, using a sharp knife, slice 3-4 slits in the top of the loaf to give it a loaf-like appearance. The bread should be about 8" long.

    Coat with egg wash using a brush. Make the egg wash by whisking the egg and whole milk together. Sprinkle two teaspoons of granulated sweetener on top of the loaf. Bake for 20 minutes. Then repeat this process and sprinkle with the remaining sweetener. Bake for another 20 minutes.

    Turn the oven temp down to 300 F and cook for another 45 minutes to one hour until baked through and nicely golden brown on top. Allow the loaf to cool well before slicing. Slice the bread into 12 slices. Optionally spread the slices with Keto-friendly chocolate hazelnut spread or softened grass-fed butter to serve.
