  • Step 1

    Preheat an oven to 350 F. Combine all the dry ingredients together in a medium mixing bowl.

    In the meantime, melt the butter in a heat proof bowl in the microwave in 30 second increments until melted. Add the vanilla.

    Add butter mixture to the dry mixture and slightly mix then add the eggs (mix slightly).

    Add the coffee (the stronger the coffee the better!), do not add the coffee to the cake batter when it is too hot, but warm is ok.

    Pour batter into a very well greased or sprayed with cooking spray 8” round cake pan.

    Bake for 20 minutes or until a toothpick inserted into the center of the cake comes out clean or the cake springs back to the touch. Allow the cake to cool completely before glazing it with ganache.

    To make the ganache, heat the cream in a heatproof liquid measuring cup until very hot in the microwave. For my microwave, this was 30 seconds and then another 15 seconds. Add the chocolate chips and allow it to sit in the hot cream for 1 minute.

    Stir the chocolate until completely melted. If the chocolate is not completely melted, heat in the microwave in 5 second increments, stirring after each time.

    Pour the warm glaze over the cooled cake and spread the ganache out to the edges of the cake to allow it to drip down the sides. You can place the cake on a cooling rack over a piece of parchment to allow the chocolate to drip down. Or use a plate if you don’t want to waste any chocolate.

        If I didn’t know this was keto I wouldn’t have guessed. Very good and kills the want for sweets. I did have to bake it 15 minutes longer.

          This cake looks amazing if you can find all the proper ingredients. I really wish this app would consider that many members are not living in the US. I can’t find a lot of these special ingredients in Europe. I will have to fill a suitcase on my next trip back to the US and who knows when that will be, thanks to the pandemic that doesn’t seem to go away. 😕

            I’m in NZ, and I understand what you are saying but there are a lot of similar products about, just takes a moment t to compare macros online, or order swerve from Amazon.

          this is absolutely delicious! had to bake it 18 mins longer and it came out great...easy and kinda has the texture of a brownie. love this cake.

                This is the 2nd recipe I've seen here in the Carb Manager recipes where 1 c of Ultimate Icing Sugar Replacement by Swerve is indicated parenthetically to be equal to 240 g. The other recipe is for Keto Cheesecake Swirl Brownies. I prefer to weigh solids, especially anything that can be "packed" into the measuring cup, so for the brownies I appreciated having the weight listed. The first time I made the brownies I observed trying to weigh 240 grams that I was taking a lot more than 1 cup of this product. Since then I have 1) measured by volume and then weighed only 158 grams (I intentionally packed the measuring cup) 2) Checked at https://swervesweet.com/faqs#baking-cooking to find that the manufacturer claims 1 cup of this product weighs only 125 g. My weight measurement of 1 cup of product occurred in my second attempt to make the brownies. Those brownies were better than the first batch using the smaller amount of Swerve. I plan to try this cake recipe now using only 125 grams of Swerve. I am asking that your investigate my claims here and if you find them to be true, please correct the parenthetical indication of the weight of 1 cup of Swerve in your list of ingredients.

                  Sugar replacement. This Swerve Is like powdered sugar, they also have a brown sugar replacement. You can find them in the baking isle by the sugars.

                This was a good recipe. The foundation's texture is good. I ended up putting 1/2c of sour cream in to the mixture. I cooked the foundation and set it aside, then repeated the recipe for another layer. While I let the cake cool, I made two batches of the ganache, but instead of warming the cream I whipped it lightly then added the chocolate. I folded the two together until it was a light frothy mixture. I then put a layer of the ganache over the first layer, then added the second layer, pouring the remaining mixture over the top. I then whipped heavy cream and Monkfruit sugar (I halved the recipe to cut down on the carbs) and put it in the frig to stiffen. I then served the cake with the whipped cream on the side. *** CORRECTION TO RECIPE Sugar is considered a WET ingredient. When you add sweetener, it needs to be added with the eggs and coffee, not with the dry items. This prevents the cake from becoming heavy and chewy. Instead you get a lighter, fluffier cake.

                Can you make this cake and icing ahead of time? I want to make it a day before for my kids birthday. Will the icing hold up?

                  Cake can definitely be made ahead of time! Just wrap well in plastic wrap after it's cooled. The icing I would do day of as it goes on warm so it's spreadable! You could made icing ahead of time, chill it and then whip it instead! That would hold up prior. Enjoy it!

                According to my calculations: Swerve (1C) = 192 net carbs Almond Flour (2C) = 48 net carbs Hersheys Special Dark Cocoa (1/2C) = 48 net carbs 2 eggs = 1 net carb Baking Powder (1 tsp) = 1.3 net carbs Sugar free choc chips (1/3C) = 10 net carbs TOTAL NET CARBS= 300.3 Per slice (above total divided by 12) = 25.02

                  Net carbs are total carbs minus fiber and sugar alcohols. You are calculating total carbs

                How did you calculate the net carbs? I looked up the Swerve and it has 4g Net carbs per Tsp. The recipe calls for 1 CUP (48tsps). That alone is 192 carbs and divided into 12 equals 16 carbs per slice even if NONE of the other ingredients had carbs (which they do). What am I missing here? Or is this whole thing just a scam?

                  My swerve is 4g carbs MINUS the sugar alcohol is 0g carbs. That's how you would figure that. Same as if it had fiber.

                Really, Really good. I used Stevia-sweetened chocolate chips for the ganache. Moist and the right amount of sweet. Will make this again and again!
