Chicken breast
4 small - split
Mozzarella cheese, whole milk
0.75 cup, shredded
Fresh Parsley (for flavoring only)

Step 1
Preheat your oven to 350F/180C. Season the chicken with salt and pepper and arrange it in a baking dish. Set aside.Step 2
Add the butter to a nonstick pan and place it over medium heat. Thinly slice the onion and transfer it to the pan. Add a pinch of salt and stir for 2 minutes until coated with the butter.Step 3

Instead of 2 onions I used one and a couple handfuls of spinach to put over the chicken and under the cheese. It was phenomenal! I will definitely make this again.
