Keto 5-ingredient Caramelized Onion Chicken Bake

The combination of caramelized onions and melted mozzarella cheese is delicious on many things, and this chicken bake is no exception. Tender chicken breasts, are topped with caramelized onions and mozzarella cheese, and broiled to golden perfection to create the ultimate quick and easy Keto dinner recipe. This easy caramelized onion chicken recipe can be on your dinner table in about 45 minutes.

How to make caramelized onions?

Caramelized onions are one of the most delicious yet underrated foods ever. Yellow onion slices are cooked in fat, usually butter, over medium-low heat for a prolonged period of time. The goal is to get the onions soft and golden without burning them. They require patience and lots of stirring. The result is buttery, sweet, and caramel-colored onions that taste amazing on their own.

Can you swap the mozzarella for another type of cheese?

Absolutely! Try substituting it for other melty cheeses like provolone, gouda, cheddar, or gruyere for a classic combo. This dish would also be tasty with stronger cheese types like parmesan, aged gouda, or asiago.

What can you serve this dinner with?

This garlic butter chicken dish is low in carbs, leaving you plenty to play around with for side dishes. You can pair this rich meal with zesty lemon noodles, cauliflower rice, or mashed cauliflower. Try keeping it simple with steamed broccoli, sauteed asparagus, a green salad, or roasted brussel sprouts.

Is this recipe suitable for meal-prep?

Yes, it is! The best 5 ingredient Keto recipes are ones that can be prepped for later. Preparing a larger batch is just as quick and easy and will provide you with ready-to-eat lunches for a couple of days. After baking, allow the caramelized onion chicken to cool, then, transfer each portion to an airtight container with your choice of side dish. When ready to eat, heat it in the microwave for a couple of minutes until warm.

Instead of 2 onions I used one and a couple handfuls of spinach to put over the chicken and under the cheese. It was phenomenal! I will definitely make this again.

Does it matter which type of onion? Like white or yellow?
