Ingredients
Rotisserie Chicken
½ ounce
Avocado
1 each
Tomato
1 tablespoon, chopped
Cucumber
1 tablespoon, chopped
Scallions
1 medium - 4 1/8" long
Cilantro
1 tablespoon, chopped
Sour Cream
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Slice the avocado in half, lengthways and remove the stone.Step 2
Finely dice the scallion and add to a mixing bowl along with the tomato, cilantro and cucumber. Season with salt and pepper and stir to combine.Step 3
Divide the sour cream evenly between the avocado halves.Step 4
Divide the salsa between the avocado halves.Step 5
Shred the chicken and arrange on top of the salsa to serve.

Excellent recipe! I will be making this again, except serving it outside the shell. I had a slice of the Keto bread with melted garlic butter on top. Yummy!!
