Preheat the oven to 375 degrees Fahrenheit.Step 2
Cut the fennel into 1/2 inch thick slices and quarter the onion. Arrange across a sheet pan.Step 3
Mince the garlic and add to a small bowl along with the olive oil, lemon juice and fresh thyme. Stir to combine.Step 4
Drizzle the oil mixture over the vegetables and rub in with your hands.Step 5
Transfer to the oven to bake for 30 minutes turning halfway through, until tender and golden.
