Recipe Steps

  • Step 1

    Combine all dry ingredients together and stir with a whisk. Making sure the xanthan gum is fully blended in to ensure it does not create lumps later on.

    Add in the cold milk.

    Stir with a whisk until thickened, about 1 minute. Strain pudding through a sieve if any lumps remain. Refrigerate until cold and serve!

    I made this recipe and used the gram measurements.It was disgusting. Way to much icing sugar. I was wondering already of the amount before I made it. Sadly I googled afterwords what a 3/4 cup of icing sugar in grams are….it’s 75 gram not 180 gram. I might give it another go with the right amount. 😅right now I have the taste of icing sugar replacement in my mouth.

      Delicious 😋 added 1-t coconut extract 2- T unsweetened coconut flakes Used THM Super Sweet & 1 dunk Stevia This will be a constant entry as a snack

        I LOVE this pudding, even for breakfast! I add chia seeds, coconut flakes, cinnamon & maple, granola or mixed berries 😋 When I make it i sometimes change the milk or extract for something different! I use my whisk on my kitchen aide mixer & add the xantham gum to the powdered swerve before adding to the liquid.

            My husband just made this with the instant sugar free box and about 3 cups of HWC. Turned out great!!!

              This is delicious and easy to prep. You list vanilla in the ingredients, but not when putting everything together. I just added to the coconut milk when adding it to the dry ingredients.

                I like this, I've substituted some vanilla for lemon extract it came out awesome. The blender idea is a time saver.

                  Delicious! I used coconut extract instead of vanilla, and Splenda instead of Swerve. The next time I make this I will cut back on the Splenda as it was a little too sweet for me. I put all of my ingredients in a blender, gradually adding the dry ingredients while blending. The result was just like creamy pudding with no lumps.
