Keto Tarragon Lemon Crock Pot Chicken
This simple Crock Pot dish is another recipe you can throw together before bed or work and leave to cook until it’s dinner time! Chicken is lightly seasoned with an emphasis on fresh tarragon and lemon slices. A blanket of veggies rounds out this meal, leaving everyone satisfied.

Boneless Skinless Chicken Breast
1-½ pound
Salt
¾ teaspoon
Black Pepper
0.5 teaspoon
Onion Powder
0.5 teaspoon
Vegetables Fresh Herbs Tarragon by Freshdirect
1 gram
Lemon
2 slice - 1/8 of medium
Butter
1 tablespoon
Vegetable Medley Broccoli Cauliflower Carrot by Marketside
12 ounce
Salt

Step 1
Butterfly the chicken breasts and pound them flat to less than a 1-inch thickness. They don’t need to be too thin.Step 2
Place the chicken breasts in the bottom of a crock pot. It’s okay if the chicken overlaps slightly. Sprinkle the first amount of salt and pepper, and the onion powder, over the chicken. Remove the leaves of approximately 1 sprig of tarragon and distribute them over the chicken. Arrange 2 slices of lemon on top as well as the butter (cut into small pieces).Step 3
Lay the vegetable medley mix (thawed) over the chicken. Sprinkle the final seasonings over the vegetables.Step 4
Cook the crock pot on high for 4 hours. You may also cook on low for 6-8 hours. Mix the ingredients together to distribute the butter and seasonings before serving hot!

Can we cook this without the lemon

Yes, you can omit any flavor you don't want! Removing the lemon will only reduce your carbohydrates for the full recipe by approx. 3-4g, so very little changes nutritionally without the lemon. Hope this helps!

I’m new, this looks good but am I supposed to be eating carrots? I haven’t been but if I’m allowed I’ll be eating them for sure, I love carrots

Hi Cindy, Since the carrots are part of a vegetable medley, the amount per serving is acceptable. This small amount of carrots shouldn't increase your blood sugar dangerously. If you're concerned, you can choose a broccoli/cauliflower mix instead. Hope this helps!

This sounds really good and easy. Question: can this be done in a pot roast pan in the oven? I think the only thing that needs to be changed would be the cooking time, but by how much?

Hi there, Using a roasting pan is a great idea! If you're roasting at a low temp (around 300 degrees F), I would suggest cooking for 3-4 hours. However you may need to adjust this time depending on your oven and actual cooking temp. Hope this helps!
