Low Carb Ribeye Steak and Gorgonzola Bacon Gravy
If you’re in the mood to treat yourself to a nice dinner, but you don’t want to risk your diet by going out, this recipe for steak and gravy will hit the spot. The gravy is creamy and thick, without the use of any carbohydrates from flour or cornstarch. Gorgonzola cheese is very similar to blue cheese, but with a richer flavor and is more creamy. You’ll enjoy every last bite of this decadent meal.

Recipe Steps

Step 1
On a flat, clean surface, rub down your steak with the salt, pepper, and olive oil. Place the steak in a ziploc bag to marinate. At least 6 hours for marinating is best, but you can marinate for as little as 1 hour.Step 2
After marinating, heat a medium skillet over medium-high heat. Place in the steak with any additional juice. Cook the steak to your preferred level of doneness. For a medium rare steak, cook 4-5 minutes per side.Step 3
Transfer the steak to a clean surface to rest. Leave the skillet on the heat, and place in the bacon. Cook the bacon until both strips are crispy. Then, transfer the bacon strips on top of the steak. Leave any juices in the pan.Step 4
To make the gravy, turn the skillet to a low heat. Melt the butter in the skillet to de-glaze it. Then, whisk in the heavy cream. Cook on low until all the fats have combined.Step 5
Gently stir in the beef broth, pepper, bay leaf, and garlic powder. Let the gravy gently simmer for a few minutes, so the fat to liquid ratio adjusts and the gravy reduces slightly.Step 6
Remove the bay leaf. Chop the first amount of gorgonzola cheese, and stir it into the gravy. Cook the gravy until it thickens properly. Then, remove it from the heat and plate your steak and gravy together.Step 7
Top off your steak with additional crumbled gorgonzola cheese and enjoy!

This looks wonderful! And perfect for a splurge of someone doing the OMAD diet! I’ll be giving this a try soon!

I don't consider this recipe as Keto. You can't lose weight eating such as this recipe.

It IS keto. I've been eating expensive cuts of meat with luxurious, rich gravies and sauces. I've lost 26 pounds in about 6 weeks doing so.

All the ingredients are low carb, hence KETO. The quantity you eat is up to you and the calories planned for this meal. The sauce is quite delicious.

You probably shouldn’t be giving a one star rating for something you haven’t tried. This would be good for a splurge that won’t kick you out of ketosis or for someone like me who is doing an intermittent fasting diet. I need low carb dense caloric dishes. Also, I doubt too many people could eat this whole dish in one sitting.

Looks delicious! Is the 8oz steak meant for one serving/one person? Thank you.

The only thing I would change is the salt. I would reduce the salt to 1/2 tsp. I've been doing keto for the last 4 days and notice the amount of salt on the steak during marinating. When it came to the final meal it was heavily salty. Reduce salt and it will be great. The gravy is on point.

It tasted pretty good. I sautéed some spinach for a side. I would not that you should put in a while bay leaf and not crumbled bay leaves.

Has anyone swapped out the Gorgonzola or cream cheese? If so, how did it work out?

Not a favorite. First time using Gorgonzola cheese, thing that we didn’t care for the flavor.

Keto isn’t all about calories , it’s the combination. I’m not really counting calories , but I am watching my protein and carb intake . It’s working so far .

Looks amazing, but that's my whole days worth of calories. I guess I could try this on a day that I IF and only eat 1 meal.

Probably cut down the steak size and maybe one strip of bacon!

Calories are for a 16oz serving. You would most likely divide that into smaller portions of 3-6oz.

Tried this recently. It was SO GOOD! I had a 16 oz steak so doubled the gravy. Didn't have to cook the next night just warmed this up and it was just as good as the first time.

The Gorgonzola cheese adds a great flavor to the combination. Just delicious.
