Almond Butter
1 cup
The Ultimate Icing Sugar Replacement by Swerve
1 cup
Raw Egg
1 large
Vanilla Extract
2 teaspoon

Step 1
Preheat an oven to 350 F. Line two baking sheets with parchment paper. Combine all the ingredients in a mixing bowl and mix with a stand mixer or hand mixer until combined.Step 2
Roll into 15 balls and place on the lined baking sheet. I could fit 12 to a sheet. Press the cookies with the tines of a fork in both directions until flattened.Step 3
Bake for 12-14 minutes until cooked through. Allow the cookies to cool completely on the baking sheet before removing.

The most expensive cookies I have ever made! And I don't even like them. I realized I don't like almond butter after making these. And for me it's not worth it. My husband liked them though! But I won't be making these again. However, I might try again with peanut butter instead.

It’s soooo goood!!! Is anybody knows why Keto food is a lot? It’s been a week I have shifted on Keto diet and feel 250g almond butter based on my macros is a lot!!!!!!

After reading other reviews, I created a variation from two of the reviews, I added only 1/2 cup monk fruit and 1 3/4 cup almond butter and 1/4 cup crunchy peanut butter. OMG De-lish-ish!!! And, BTW....1/2 cup Of sweetner was plenty (aka, perfect in our opinion). Thank you other reviewers for your input. And btw, I cooked them an extra 10 minutes for a nice crunch.

According to the reviews, I only used 1/2 of the sweetener, used 1T vanilla and made 1/2 C Almond but with 1/2 C chunky peanut butter. I should have used more sweetener, maybe 3/4 C but otherwise, it's a nice treat. Not sure about the change in macros other than lowering the amount of sweetener by half. It made 16 cookies and came out a little crumbly. I think I could have baked them another few minutes.

I have made these twice. First time I followed the recipe exactly, they were a little too sweet for me. The second time I cut the sweetner in half and used peanut butter instead of almond butter. Fantastic!

I made it exactly as the recipe instructed except I was short on the almond butter so I filled the rest with peanut butter. They are very good. I will definitely make these again!

I bake mine for 7 minutes, leave them on the sheet to set. They taste like cookie dough! Also add SF chocolate chips to mine

I reduced sugar to 1/2 cup, added 1/4 cup swerve brown sugar, 1/4 cup coconut shavings, and upped the vanilla to 3 teaspoons- they were really good! Next time I might reduce sugar to 1/3 cup.

I add chocolate chips but I agree they are too sweet and I love sugar. I'm going to try and use the Swerve Brown Sugar and see if that changes the taste.

These are good but a little too sweet...I think I’d only do 1/2 cup of swerve and add 1/2 cup of almond flour or dried coconut shreds instead.

First time I made them. I added sea salt flakes to the top. They are delicious.
