Easy Keto British 'Toad In The Hole' (Sausages In Batter)

Family dinners don't get much more comforting than a classic British toad-in-the-hole. The fluffy gluten-free batter is paired with pork chipolata sausages – just add your favourite low carb veg on the side. This British Keto recipe is designed to be a low-cost recipe perfect for midweek meals.

Keto British food is simple, hearty and uncomplicated. It’s especially perfect when there’s a bit of a chill in the air.

Are there actually toads involved?

Contrary to the peculiar name, there are no toads harmed in the making of toad-in-the-hole! The dish roughly dates back to the 18th century, where it’s widely assumed this meal was created as a way to make any meat go further in poorer households. Meat back then was expensive and families were large, so any leftover meat scraps were used and bulked out with a batter which was much cheaper to source. The name itself is believed to be relating to the similarity in appearance to toads sitting in wait of prey in their burrows, their heads visible against the earth. Just as the sausages do peeping out from the batter.

Can I substitute ingredients?

You can use any kind of sausages but take note that not all sausages are created equal. Source the best quality sausages you can afford and ensure they are made with a high pork percentage (or meat of choice), as many have hidden fillers such as rusks, starches and flours. You can also make this with plant-based sausages for a vegetarian option, again just check the ingredients to ensure they are Keto- friendly.

What can I serve the dish with?

Pair this dish with any of your favourite low carb steamed veggies. Kale, cabbage, greens, broccoli and cauliflower are all great options. Finish off with a drizzle of gravy of choice.

  • Step 1

    Preheat the oven to 400F/ 200C . Equally spread out the sausages in a deep lipped ovenproof baking dish. Roast in the oven for 15 minutes.

    Remove the sausages from the oven and drizzle over the avocado oil. Turn the sausages over to brown the other side (they don’t need to be cooked through at this stage).

    While the sausages are roasting, make the batter. Put the arrowroot powder, unflavored whey protein powder, baking soda, thyme, garlic powder, onion powder and salt and a good grind of black pepper in a large bowl and whisk to combine. Add the eggs and milk and whisk to combine, then transfer to a jug. Alternatively, you can add all the ingredients into a blender and pulse to combine until smooth.

    Working quickly here, carefully remove the dish from the oven. The oil needs to be sizzling hot to allow for the batter to rise. Pour the batter over and around the sausages.

    Return the dish to the oven. Roast for a further 12-15 mins or until the sausages are cooked through and the batter is golden on top. Serve with steamed cabbage or other low carb veggies and a rich gravy.
