This simple summer salad is packed with Mediterranean inspired ingredients from sweet tomatoes, crunchy pine nuts, aromatic basil and soft mozzarella combined with creamy avocado.

Ingredients
Cherry Tomato
4 cherry
Mozzarella Cheese
3-½ ounce
Lemon Juice
2 teaspoon
Arugula
2 cup
Olive Oil
1-½ tablespoon
Pine Nuts
1-½ tablespoon, whole pieces
Avocado
1 each
Basil, Fresh
¼ cup, whole pieces
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Add the pine nuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes until lightly golden.Step 2
Slice the tomatoes in half and add to a large serving bowl with the arugula. Slice the avocado and add to the bowl. Season to taste and toss to combine.Step 3
Slice the mozzarella into half inch thick discs. Arrange the mozzarella over the salad and scatter over the fresh basil and toasted pine nuts.Step 4
Drizzle with the lemon juice and olive oil to serve.

Can you sub arugula for spinach? Will that change the % count? New to keto so unsure.
