  • Step 1

    Preheat your oven to 400 F/200 C. To a bowl, add the ground beef, ¼ cup parmesan, ¼ cup mozzarella, the egg, ½ tsp salt, and ½ tsp black pepper. Chop the parsley and add most of it in, reserving the rest as garnish.

    Combine the meatball ingredients until everything has come together. Divide into 20 portions and roll them into meatballs. Add the ghee to a skillet and place it over medium-high heat.

    Cook the meatballs in the skillet until browned on all sides. You may have to do this in 2 or 3 batches. Remove the meatballs from the skillet and transfer them to a casserole dish.

    Add the heavy cream to the skillet. Stir to remove the caramelized bits at the bottom of the pan. Season with the remaining salt and pepper and simmer for 5 minutes until it has thickened. Turn off the heat and stir in the remaining parmesan cheese.

    Pour the heavy cream mixture over the meatballs. Sprinkle 1 cup of mozzarella cheese on top. Transfer the casserole dish to the oven.

    Bake for 15-20 minutes until the meatballs are fully cooked and the cheese is golden. Let rest for 10 minutes then garnish with the remaining chopped parsley. Serve and enjoy!

      So good!! I also added fresh mushrooms. And my hubby (who is not low carb at all) thought this was amazing. Definitely a keeper! Easy and quick to prepare. I served it fresh a salad of fresh greens.

              This is delicious. I took the suggestion of other reviews and added 1 C of diced mushrooms to the cream. Definitely putting this dish in the dinner rotation.

                Wow! Rich, a little salty, high calorie, very satisfying! Hey, we gave up a lot to eat this way! I'm having to cut some calories to hit my macros, so when I use hamburger, I only use 12 ounces instead of a pound. I proportionately cut most of the ingredients in the recipe. So, I only get 4 meatballs per serving, but who's counting? BTW-I can do some dairy, but for the heavy cream, I substituted a 5.4oz can of coconut cream.

                  This dish was delicious. I mixed mine in a stand mixer and used a cookie scoop to make the meatballs (I got 23 instead of 20 🤷🏻‍♀️) which made the process quick and easy. Like so many others I added mushrooms. Also, I swapped the parsley for cilantro and added garlic to the sauce. Rather than ghee, I fried the meatballs in coconut oil and added butter to the sauce for the richness. I served it over broad zucchini "noodles" (I just run a zucchini through a mandolin and saute in a small amount of broth). I will definitely be making this again.

                            Great flavor, husband absolutely loved it. Too meaty for me but it tastes great will do again and try to add some cauliflower rice

                                Sounds yummy, but is there suggestions for making more dairy free? or at least less dairy? I could do Parm but mozzerella and for sure heavy cream will upset my stomach. Just curious if anyone had suggestions. I will ponder if i can adapt :)
