Keto Crispy Breaded Chicken Salad
You will love this quick and easy Keto meal prep dinner recipe prepared with crispy almond flour breaded chicken on top of a luscious bed of green salad leaves. The salad is topped with sweet cherry tomatoes and tart blueberries, then dressed with a delicious garlicky red wine vinaigrette. We love salads because they are one of the best ways to enjoy a Keto meal full of vitamins and minerals (especially when you use sea salt for seasoning the dressing). Salads like these, since they can be eaten cold, are great for meal prepping and do not need to be reheated before enjoying. You can portion several salads at a time and store them in the fridge for easy meal prep. Meal prepping is great tool for those sticking to a calorie limit or for those looking to hit higher calorie limits for building muscle.
How is the crispy chicken made?
The crispy chicken is made by coating chicken tenders in finely ground almond flour. The almond flour is generously seasoned with kosher salt to give the coatinglots of flavor. The chicken is placed into an air fryer and sprayed with avocado oil to coat the outside. Doing this will allow the chicken to brown so nicely with minimal effort and prep. It is our new favorite way to enjoy chicken tenders!
What are the best containers to use for Keto meal prepping?
We like to use glass containers for meal prepping. They are the safest to use because they have no chemical leakage. If plastic containers are more economical for you, you can buy deli containers in bulk. They stack really nicely in the fridge. However, it is advised to transfer the food to a microwave-safe container before reheating if using deli containers.

Raw Chicken Tenders

Step 1
Place the almond flour on a plate. Add the kosher salt and mix the mixture around with your fingertips. Place the chicken tenders into the almond flour a few at a time. You do not need to dry off the chicken tenders before doing this step. Turn the chicken tenders around and press them into the almond flour mixture until it is fully coated.Step 2
Then, place the chicken tenders in a single layer onto air fryer racks or into the bottom of an air fryer basket fitted with a rack. Spray the almond flour-coated chicken tenders generously with avocado oil. You can buy avocado oil like this, or you can place oil in an oil mister. Alternatively, you can use a silicone brush to apply the oil evenly.Step 3
Place the chicken in the air fryer. Turn the temperature to 400 F and cook for 15 minutes. Rotate the racks and cook for another 10 minutes or so until the chicken is golden brown all over and crispy. If using an air fryer that only allows one rack at a time, you will need to cook the chicken in two separate batches.Step 4
While the chicken is cooking, prepare the other salad ingredients. Place the lettuce into the bowls. Wash and slice the tomatoes in half. Wash and drain the blueberries. Prepare the vinaigrette as well. Place the olive oil, vinegar, and sea salt in a cup. Grate in the garlic using a Microplane or garlic press. Whisk well to emulsify.Step 5
Once the chicken is done cooking, allow it to cool slightly before topping the salad with it. Slice the crispy chicken into bite-sized pieces. Top the salad with sliced chicken, sliced tomatoes, and blueberries. Drizzle about 2 tbsp of the dressing on top of the salad. Serve immediately!
