The base is made from the Carb Manager Tart Dough, so please have a batch of that prepared in advance. Light, flaky, and just a little sweet - the perfect dessert!

Step 1
Have a Carb Manager Tart Dough full recipe prepared.Preheat an oven to 350 degrees. Divide the cold dough into 24, ¼-ounce balls. Place the tart dough balls in a 24-count mini-cupcake pan lined with pan spray. Use your thumb to press down the center of each dough ball.Step 2
Bake the tart dough discs for 18-20 minutes. You’ll have golden baked edges and a crisp bite with a flaky inside. Set the baked discs aside to cool.Step 3
Once the baked tart dough has cooled, melt the chocolate over a double boiler. Once the chocolate is melted, transfer it to a piping bag or a ziploc bag.Step 4
Cut the corner of your piping bag, and drizzle chocolate over the tops of the thumbprint tart dough discs. Let the chocolate cool before eating.

I was thinking the same thing but having used this tart dough recipe for hand pies with an excellent result I think there's something to this dough that makes it cook best when it's in a bowl shape. You get a crispy flaky satisfying result for a keto bread product. I was thinking depending on carb tolerance you could fill with a little bit of the chocolate instead of drizzle and or add a little no sugar added jelly. Really, the filling variations are countless. They could be used without the chocolate to make great appetizers filled with cheese and vegetable or cheese and nut or meat variations. For a sweet appetizer or dessert you could add a small amount of sugar replacement to the dough and then fill with some sort of marscapone mix.
