Low Carb Glazed Shiitake Mushrooms and Pork Chops

Whether you are making lunch, dinner, or meal prep, this Keto shiitake mushroom recipe is ideal to use. It has the perfect portions of protein, carbs, and some fat for the meal as well. Pork chops are tenderized and marinated in a Keto-friendly blend of sauces and spices. Then, they’re cooked until they have crispy edges but moist insides. Served over the pork chops are forkfuls of glazed shiitake mushrooms, sauteed in butter and glazed with yummy Worcestershire sauce. Although most of the recipe time is dedicated to the marination, you can marinate the pork chops in advance. It takes less than 30 minutes to cook the meal!

What types of mushrooms are Keto?

Shiitake mushrooms are one of many varieties of mushrooms that are Keto-friendly. Most mushrooms are very low in carbs. A good rule of thumb is that most mushrooms have about 1 gram of carbohydrates per 1 ounce. On the Keto diet, you can have shiitake, oyster, cremini, portobello, and even white button mushrooms in your recipes. Feel free to make substitutions as needed in your cooking as well.

  • Step 1

    Prepare pork chops in advance by pounding and tenderizing 5-ounce chops flat with a kitchen mallet. Add the pork chops to a bag with soy sauce, mustard, minced garlic, red pepper flakes, and chopped green onion. Seal the bag, then use your hands to spread the ingredients around to cover and marinate the pork chops. Marinate the pork chops in your refrigerator for a minimum of 3 hours.

    After marinating the pork chops, heat olive oil in a skillet over high heat. When the pan is hot, place in the pork chops and pour any excess marinade over the tops. Add pinches of salt and pepper on top of each pork chop. Cook the pork chops on one side until they’re charred with blackened edges.

    Reduce the heat as necessary so the pork doesn’t dry out. Flip the pork chops over and finish cooking them. Once the pork chops are cooked, set them aside, but leave all excess liquids or charred bits in the skillet. Return the skillet to your stovetop to make the mushrooms.

    If they’re not already sliced, thin-slice your shiitake mushrooms. Leave them aside while you melt the butter in your skillet over low heat. Use a wooden spoon to deglaze the pan and pick up any charred seasoning from the pork chops. Add the shitake mushrooms to the melted butter, and cover your skillet with a lid. Cook the mushrooms down until they’re tender.

    Remove the lid, and turn the heat on your skillet up to high. Wait for the pan to get hot and the mushrooms to start to sizzle. Then, pour Worcestershire sauce over the mushrooms so it steams and infuses them. Quickly reduce the heat back to low, and stir the mushrooms continuously while the sauce picks up the remainder of any charred seasoning in the skillet. The mushrooms will appear glazed and browned in the Worcestershire sauce.

    Slice the pork chops for serving, then ladle glazed shiitake mushrooms over them. Don’t forget any drippings that may be in the skillet. You can add more chopped green onion for garnishing. Enjoy hot right away or arrange in containers for meal prepping.
