It’s all whole cuts of meat with minimally added sugar and no processed additions. Served on the side is a healthy dish of broccoli dripping in extra virgin olive oil. What is paleo?

The paleo diet consists of foods believed to be available during the paleolithic era of time. It’s also known as the “caveman” diet. Not to limit you, another way to view the paleo diet is as all organic and whole foods that have been minimally processed. Expect to eat a lot of fresh produce and whole cuts of meat.

What can I not eat on the paleo diet?

    Cook the bacon into crispy strips on your stove. Once the bacon has cooled down, mince it into bacon bits. Try to make the pieces extra small so they blend into the meatloaf better.

    Turn on your oven to preheat to 400F (210 C) and spray a loaf pan with cooking spray. In a large bowl, combine ground beef with the bacon bits, ground flax, egg, chopped green onion, salt, pepper, onion powder, garlic powder, cumin, paprika, and nutmeg. Leave the meatloaf mixture aside for 5 minutes to give the flax time to thicken.

    Spread the meatloaf into your prepared loaf pan. Use a toothpick to poke several holes in the top of the loaf. In a small dish, whisk together tomato sauce, brown sugar, and pinches of salt, pepper, cumin, and onion powder. Brush the sauce over the top of the meatloaf.

    Cover the meatloaf with aluminum foil and bake for 45 minutes. Then, bake the meatloaf uncovered for another 30 minutes. You can use your broiler to brown the top of the meatloaf more at your discretion.

    When the meatloaf is nearing the end of cooking, make the broccoli by adding thawed broccoli from frozen to a large pan on your stove. Toss the broccoli with olive oil, salt, pepper, and Italian seasoning. Cook the broccoli on high heat until the spices have browned. Cook at a lower temperature to cook the broccoli to your preferred tenderness.

    Take the cooked broccoli off the stove and toss it with extra virgin olive oil. Cut the finished meatloaf into approximately 5-ounce slices. Serve hot.
