  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray with a little oil.
  • Step 2

    Add the ground almonds, onion powder, salt and pepper to a mixing bowl. Finely chop the rosemary, add to the bowl and stir well to combine.

    Beat the egg in a large bowl, dice the chicken and add to the bowl, coating it in the egg.

    Tip the ground almond mixture out onto a clean surface or baking sheet. Drop the egg coated chicken pieces into the mixture, half a batch at a time and turn each piece until it is well breaded all over.

    Arrange the breaded chicken across the oven tray and bake for 18 minutes or until the chicken is completely cooked through and the coating is crisp and golden.

    So good!! Did mine in the air fryer - Small chunks - mixed a little avocado oil in with the egg 10 mins @ 400 flipped 1/2 way through.

          Hi, the recipe calls for 1 pound of chicken which is divided into four servings. You should be able to dice around 7 pieces of chicken breast per person.

        My husband has made these with crushed almonds once and with almond flour the next time. I prefer the crushed almonds because it gives it more if a crunch. Both ways were really good. The almond flour definitely made it a quicker meal.
