  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Cut the ends of the radishes and slice any larger radishes in half. Arrange across a shallow oven tray.

    Whisk together the syrup, oil, lemon juice, zest, thyme, salt and pepper. Drizzle the oil mixture over the radishes and use your hands to rub the seasonings all over the vegetables.

    Transfer to the oven to bake for 18-20 minutes or until tender and caramelized.

    I made this tonight and am not a fan. I've had sliced radishes (with seasonings & butter) skillet-fried before, and they were pretty good. I diced these for this dish, and the texture was off for me. They don't get super tender. The Lekanto maple syrup didn't help, but I'm not a fan of syrup anyway. My husband loves syrup, but he didn't really care for this either. I ended up adding some bell peppers and onions to try and give it extra flavor after a taste test. The taste isn't awful, but it's really not as good as I'd hoped it would be. Overall, not a fan, but I've had worse things. It was disappointing.
