This Keto cheeseburger soup is a great way to incorporate all your favorite cheeseburger flavors into one deliciously filling meal - minus the guilt of the carb-heavy bun! Our easy Keto soup is not only simple to prepare, but it also only requires one pan for cooking with no blending required. This quick and easy crowd-pleasing soup is a great option for family lunches or served as a light dinner.

Can I Use Ground Beef Instead?

We have prepared our Keto cheeseburger soup with a base of ground turkey thigh. However, you may substitute this for ground beef for a more classic burger flavor, or any other ground meat you prefer. Simply follow the directions and quantities as per the recipe, replacing with your preference in ground meat. Be sure to adjust cooking times where needed to make sure the meat is cooked through. Please ensure to update your macros to factor in any changes made to the recipe.

How Can I Reduce the Carb Count?

We have included a tomato sauce (passata), fresh tomato and onion in our Keto cheeseburger soup to give an authentic taste of classic burger flavors. These are slightly higher on the carb scale than other low carb vegetables. If you wish to reduce the carb count further to meet your daily requirements, you can omit the tomato garnish and reduce the amount of stock or tomato sauce as desired and replace with water. Please be sure to update your macros to match any changes made to the recipe.

    Heat the olive oil in a large saucepan or Dutch oven over a medium/high heat. Add the ground turkey. Cook the turkey until browned all over, breaking up any larger chunks of meat as you go. If you would prefer to use a different ground meat this will work just as well. Be sure to adjust your macros for any changes.

    While the turkey is browning, finely dice the onion. Add the onion to the saucepan along with the paprika, garlic powder and mustard powder. Stir everything together well to combine and cook for a minute or two more until fragrant.

    Add the passata (tomato sauce) and stock. Stir well to combine. Bring the soup up to a gentle boil then simmer for 5 minutes. You may add salt and pepper if desired, depending on the level of seasoning already in your stock. You may also use a vegetable stock if preferred. Be sure to adjust your macros for any changes made.

    Add 3/4 of the grated cheddar cheese and stir through the soup. Stir the cheese until melted into the soup and well combined. You may use an alternative grated cheese if preferred, adjusting your macros as needed.

    Dice the tomato and thinly slice the dill pickles. Divide the soup between individual serving bowls. Divide the chopped tomatoes and sliced dill pickles between the bowls as a garnish and sprinkle over the remaining grated cheese. Serve hot.
