  • Step 1

    Combine all ingredients together in a bowl (butter should be melted first). You can do this by hand with a spatula or you may do this in a stand mixer.

    Line a sheet tray with parchment paper. Scoop 12, 3-inch balls onto the sheet tray. The best way to do this is with a small pastry scoop, but a regular spoon is fine as well. Press the cookies down gently in the middle the flatten them.

    Freeze the cookies for about 45 minutes. Enjoy!

    This looks yummy ..I will try this with almond butter since almond butter has lower carbs than peanut butter

      i do a small batch with a tablespoon of coconut oil, a tblsp of almond butter, a tsp of cocoa, some vanilla and stevia and an ounce of pecan pieces. melt the oil and butter first then mix in the rest. pour it on a paper place, stick it in the freezer. it makes a 'bark', just break off a small piece if you need something after a meal.

      I decided to try it with PB2 too to have a lower carb count and I added 1 once of Lily’s dark chocolate chips! 3net carb per cookie!

        I made these with PB2 instead of peanut butter and they were delicious! And about 1/3 the calories and only 2 net carb instead of 5.

          It's a powdered peanut butter. You can order online or Walmart has it. 2 tablespoons is a serving which has 5 carbs and 3 fiber making it 2 net carbs per serving.

        I wonder if you used a nut butter like almond or walnut if it makes the net carbs lower? Anyone tried this? Or have any tips about how to lower the net carbs? If one cookie is 5.1 net carbs that's ¹/⁴ of my total daily net carbs. For only one cookie dosent seem much worth it. I'd have to skip a meal to be able to eat a cookie.

              So good! Tempted to put a drop of cream cheese on top before eating! Did a quick melt in double boiler. A dip in water cookie scoop made it really easy to drop onto tray. In the freezer they go!
